Weeds of Boise: Ahavath Beth Israel Synagogue Garden

Anyone who has maintained a garden or small farm knows that with all the work it takes to keep up on the garden itself, outlying areas can quickly become overtaken by weeds. Low on the list of priorities, areas outside of our garden borders are ideal locations for wild urban vegetation to thrive. Pulling all the weeds within the garden is a big enough task as it is; thus, weeds out of our reach are left to their own devices, occasionally getting mown down by a string trimmer or brush mower (if time allows), but otherwise living largely unscathed. And so, places such as these are excellent for familiarizing oneself with our wild urban flora.

I found an example of this scenario at the Ahavath Beth Israel Synagogue Garden in Boise, Idaho. This community garden is a partnership between Congregation Ahavath Beth Israel (CABI) and Global Gardens, providing refugees in the area an opportunity to grow food for their families and participate in community activities.

When I visited this site, it was clear that the weeds on the edge of the garden had been mowed down at some point. New plants had popped up after the fact while others were in the process of recovering from the “haircut” and putting on new, shrubbier growth. The mowing and the fact that it was late in the summer made identifying remnants of earlier weeds too difficult to bother. Most of the weeds that I did find were either summer annuals or perennials. A visit in the spring would reveal an entirely different cast of characters.

I stayed on the border of the garden, not wanting to invade anyone’s plot or snoop around too much. The point of the visit was to highlight weeds found outside of the borders of a garden anyway. I would imagine that, since the garden is used to grow annual fruits and vegetables, most of the weeds in the beds would be annuals as well. Longer-lived weeds don’t generally tolerate regular disturbance and instead find refuge in unkept areas outside of cultivation.

Winter Interest in the Lower Boise Foothills

The Boise Foothills, a hilly landscape largely dominated by shrubs and grasses, are a picturesque setting any time of the year. They are particularly beautiful in the spring when a wide array of spring flowering plants are in bloom, and then again in late summer and early fall when a smaller selection of plants flower. But even when there aren’t flowers to see, plants and other features in the Foothills continue to offer interest. Their beauty may be more subtle and not as immediately striking as certain flowers can be, but they catch the eye nonetheless. Appeal can be found in things like gnarled, dead sagebrush branches, lichen covered rocks, and fading seed heads. Because the lower Boise Foothills in particular have endured a long history of plant introductions, an abundance of weeds and invasive plants residing among the natives also provide interest.

This winter has been another mild one. I was hoping for more snow, less rain, and deeper freezes. Mild, wet conditions make exploring the Foothills difficult and ill-advised. Rather than frozen and/or snow covered, the trails are thick with mud. Walking on them in this state is too destructive. Avoiding trails and walking instead on trail side vegetation is even more destructive, and so Foothills hiking is put on hold until the ground freezes or the trails dry out. This means I haven’t gotten into the Foothills as much as I would like. Still, I managed to get a few photos of some of the interesting things the lower Boise Foothills have to offer during the winter. What follows is a selection of those photos.

Eating Weeds: Burdock

If we agree that weeds can be famous while simultaneously being infamous, a list of famous weeds must include burdock. Its fame largely comes from being an inspiration for the hook-and-loop fastener, Velcro. The idea for this revolutionary product came when Swiss inventor, George de Mestral, was removing burs – the dried inflorescences of burdock – from his dog in the early 1940’s. Most of us have experienced this, pulling out burs from animal hair or our own clothing, but few have felt inspired to develop a new product. Infamy reigns supreme.

But burdock’s fame isn’t tied to Velcro. Its tenacious, sticky burs, which house the seeds, have been attaching themselves to humans and other animals for centuries, frustrating those who have to remove them but finding new places to grow in the process. And what better way to pay tribute to this phenomenon than to dress oneself in hundreds of burs and parade around town calling yourself the Burry Man? Lest you think I’m crazy, just such a thing has been part of an annual celebration for over 300 years in a town outside of Edinburgh, Scotland.

Of course, burdock is more than its burs. Other, perhaps less celebrated features, are its edible roots and shoots. Its leaves are also edible, but most people find them too bitter to bother. Green Deane suggests wrapping the leaves around food to cook on a campfire. Both the roots and shoots can be eaten raw or cooked, and the fermented roots along with dandelion roots are traditional ingredients in the British beverage, dandelion and burdock. The roots, shoots, and leaves of burdock have also had a wide variety of medicinal uses.

Two species of burdock have become naturalized in North America – Arctium minus and Arctium lappa. Both species are biennials or short-lived perennials. They start out as rosettes of large leaves with woolly undersides. The leaves grow to a foot or more long and wide. At this stage burdock is similar in appearance to rhubarb. Burdock has a large taproot, which can extend down to three feet in the ground. The taproot continues to grow as the rosette expands. When the plant has reached a certain size it begins to put up a branching flower stalk. It is in the rosette stage, before the plant bolts, that the taproot should be harvested.

As the flower stalk grows, the plant takes on a pyramidal shape, with the leaves along the stalk getting increasingly smaller with height. The plant can reach several feet tall, with one source describing them as towering up to ten feet. The stalks should be harvested before the plants start flowering. Multiple flower heads are produced at the ends of the branching stalk. The inflorescences are composed of purple, tubular, disc florets that are encased and encircled in a series of hooked bracts. The flower heads resemble thistle flowers, but the plant is easy to distinguish from thistles due to its large, soft leaves. Speaking of the leaves, one photographer found them alluring enough to compile a series of photos of them.

While burdock can be nuisance plant, it is not particularly noxious. In The Book of Field and Roadside, John Eastman writes, “Burdock cannot be labeled a truly invasive weed, for it rarely intrudes into cultivated fields. Tilling usually controls and eradicates burdock populations. Its favored havens are the disturbed soils of roadsides, railroads, fence rows, vacant lots, and around sheds and old buildings.” In Wild Urban Plants of the Northeast, Peter Del Tredici also comments on burdock’s preference for minimally maintained locations including “vacant lots and rubble dump sites; the edges of emergent woodlands; the sunny borders of freshwater wetlands, ponds, and streams; and on unmowed highway banks and median strips with frequent salt applications.”

I harvested my burdock roots along an unmaintained fence line surrounding a series of raised flower beds. I chose a simple recipe for making burdock chips that involved peeling the roots, cutting them into thin slices, dressing them with olive oil and salt, and baking them in the oven. Since the author of this recipe mentioned buying burdock from a store, they were probably using Arctium lappa, or greater burdock, which is commonly cultivated, especially in Asian countries. Both species can be prepared in similar ways.

The burdock chips had a pleasant nutty flavor, but they were also a little stringy and tough to chew. If I were to do it again, I would probably use a recipe like this one that involves parboiling and then frying. Sierra suggested grating the roots and frying them in bacon grease, which would probably do the trick. There are also recipes for pickled burdock roots, which would be fun to try.

Because the plants I harvested were still in their rosette stage and there weren’t any other plants in the area that were bolting, I didn’t try the shoots. But I’ll keep my eye out, and when I find some I may have to write a part two.

If, like me, it is during the growing season that you really thrive, winters can be brutal. Color has practically been stripped from the landscape. Death and slumber abound. Nights are long and days are cold. It’s a lengthy wait until spring returns. Yet, my love of plants does not rest. And so, I look for beauty in a frozen landscape.

In evergreens, it is obvious. They maintain their color year-round. Large bunchgrasses, shrubs and trees with interesting bark or branching habits, dried fruits and unique seed heads – all of these things are easy to spot and visually interesting.

Beyond that, there are things that we are not accustomed to finding beauty in. Such things require a keen eye, close observation, and the cultivation of greater understanding and appreciation. For most people, weeds fall into this category. What is there to love or find beautiful?

I am of the opinion that there is plenty there to intrigue us. From their spent flowers to their seed heads and dried-up leaves, they can be just as interesting as the plants we deem more desirable. The winter-long green of winter annuals alone is evidence enough. So, here is my attempt to redeem some of these plants by nominating them as candidates for winter interest.

A friendly reminder: Refrain from being overly ambitious with your fall cleanup and, instead, leave certain plants in place. This not only provides winter interest but can also be beneficial to the wild creatures we share space with.

 

Winter Interest

We are well into winter in the northern hemisphere, and the plants in our landscapes have been dormant for weeks now. Trees and shrubs have dropped their leaves, grasses have gone brown, and perennial forbs have died back – their roots harboring the food they will need to return to life in the spring. What little green that is left is provided mainly by evergreen trees and shrubs, but even they are resting – metabolizing slowly and putting off further growth until warmer temperatures return. The view outside may appear largely bleak and dreary, but there is still beauty in a frozen landscape, and much of that beauty is provided by the same things that brought color and interest during the warmer months.

Many plants, though appearing dead, remain attractive throughout the winter. From fruits and cones to seed heads and seed pods, there are various structures that remain on certain plants even after leaves fall that provide winter interest. Deciduous trees and shrubs show off their branches in the winter months, which when freed from the camouflage of leaves are like sculptures – art pieces in their own right. Perennial grasses can continue to provide structure to a garden bed when left in place and upright, and color is provided by evergreen foliage and colored bark, such as the red and yellow bark of some dogwoods (Cornus spp.).

Beauty surrounds us, even in unlikely places. Things are quiet and frozen now, and foggy, dismal days abound. But winter won’t last forever. Plants can remind us of that. In them we find remnants of brighter days and an assurance that there are more to come.
